Braised Eel Recipe

Ingredients

  • 30 grams eel

  • oil

  • 1 teaspoon sherry

  • 2 tablespoon soy sauce

  • 280 ml stock

  • 1 small leek

  • 3 cloves garlic, crushed

  • 1 teaspoon corn flour

  • 2 tablespoon cold water

  • 1 dessertspoon vinegar

Method

 

1. Cut eels into 2 inch chunks.

2. Fry in oil for 5 minutes until brown all over.

3. Add sherry, soy sauce and stock.

4. Chop the leek, add to pan with the garlic. Cover and simmer for 12 minutes.

5. Dilute corn flour with water, add to the pan.

6. Bring to the boil, sprinkle in vinegar and serve.
