Braised Carp Recipe

Ingredients

  • 1 carp (910 grams), scaled and cleaned (or grey mullet or bass)

  • oil

  • 2 tablespoons soy sauce

  • pinch ground ginger

  • 1 clove garlic, crushed

  • 1 onion, sliced

  • 1 teaspoon corn flour

  • 570 ml stock (or water)

  • 1 teaspoon sherry

  • 1 teaspoon vinegar salt and pepper

 

Method

 

1. Fry the fish in smoking hot oil for 2-3 minutes. basting it thoroughly as it fries.
2. Sprinkle with soy sauce and ginger, add garlic and onion, laying them on top of the fish.
3. Reduce heat and simmer for 5 minutes to allow the flavours of the garnish to permeate the fish.
4. Dissolve corn flour in stock, pour over the fish, simmer gently for 15-20 minutes.
5. Sprinkle with sherry and vinegar, season to taste with salt and freshly ground pepper and serve.


Variation
Braised rock salmon or braised bass
Proceed as in previous recipe, substituting other fish for carp.
