Braised Carp Recipe

Method
1. Fry the fish in smoking hot oil for
2-3 minutes. basting it thoroughly as it fries.
2. Sprinkle with soy sauce and ginger, add garlic and onion, laying
them on top of the fish.
3. Reduce heat and simmer for 5 minutes to allow the flavours of the
garnish to permeate the fish.
4. Dissolve corn flour in stock, pour over the fish, simmer gently for
15-20 minutes.
5. Sprinkle with sherry and vinegar, season to taste with salt and
freshly ground pepper and serve.
Variation
Braised rock salmon or braised bass
Proceed as in previous recipe, substituting other fish for carp.
