Braised Bream Recipe

Ingredients

  • 1 bream ( 680 grams)

  • salt

  • flour

  • 113 grams lean pork

  • few spring onions

  • 4 tablespoons oil

  • 1 teaspoon soy sauce

  • 1 teaspoon sherry

  • 1 dessertspoon corn flour

  • 570 ml water

  • 1 clove garlic, crushed

  • 2 teaspoons oyster sauce
     

Method

 

1. Make a few shallow incisions slantwise each side of the fish, and sprinkle with salt.
2. Dredge with flour, coating it thoroughly.
3. Shred the pork and cut the spring onions into 2-inch strips and then shred them lengthwise.
4. Heat oil in pan large enough to take the fish, and fry the bream until it is golden brown.
5. Put on a dish and keep hot.
6. Pour off most of the oil from the pan, leaving just a film on the bottom.
7. Combine soy sauce, sherry and corn flour into a smooth paste and dilute with water.
8. Heat the pan, add garlic, sprinkle with salt and fry the shredded pork briskly.
9. As soon as it browns add oyster sauce. Blend well. Cook for 1 minute and add the corn flour mixture.
10. Put fish back in the pan, simmer together for 3 minutes. Sprinkle with spring onions and serve.
