Boiled Sole with Sweet Sour Sauce Recipe

Ingredients

  • 1 sole (910 grams)

  • water

  • 57 grams Chinese pickled onions

  • 15 grams onions

  • 15 grams fresh ginger

  • 15 grams preserved white cucumber, sliced

  • 1 teaspoon shredded lemon zest

  • sesame oil

  • parsley, chopped

  • sweet sour sauce
     

Method

 

1. Skin the fish, put into a large pan of boiling water, cover and simmer gently for 20-25 minutes.
2. Take the fish out carefully, drain and put on a large dish.
3. Slice the Chinese pickled onions, onions and ginger finely.
4. Heat the sweet sour sauce, prepared as described in the recipe Sweet and Sour Pork.
5. Add cucumber, onions, ginger, Chinese pickled onions and lemon zest and simmer for 2 minutes.
6. Add a few drops of sesame oil and pile all the vegetables, with the sauce on top of the fish.
7 Sprinkle with parsley and serve at once.


Note:
This recipe is equally suitable for plaice, cod, haddock, and hake.
