Bass with Tomato Sauce Recipe

Ingredients

  • 1 bass (450 grams), filleted

  • salt

  • 170 grams corn flour

  • oil for cooking

  • 2 1/2 tablespoons tomato sauce

  • 1 teaspoon soy sauce

  • 1 dessertspoon sherry

  • 426 ml water

  • 2 spring onions, chopped

Method

 

1. Skin the bass fillets, cut into large dice and sprinkle with salt.
2. Reserve I dessertspoon corn flour for the sauce and mix the remainder with the fish, coating the fish

    thoroughly.
3. Fry fish in deep oil until golden, then drain and keep hot.
4. Combine tomato sauce, soy sauce, sherry and corn flour with water.
5. Bring to the boil, add fish, simmer for 3 minutes to ensure that fish is impregnated with the sauce.
6. Sprinkle with spring onions and serve.


Variation
Hake or cod with tomato sauce

As above, substituting either fish for the bass. Bass with ginger sauce
