Bass with Chinese Pickles Recipe

 

cooking time: 15 minutes

 

Ingredients

  • 1 bass (450 grams) ready for cooking

  • 850 ml boiling water

  • 1/4 can Chinese pickles

  • 1 tablespoon lard

  • 1 shallot, finely chopped

  • 3 tablespoons sugar

  • 3 tablespoons vinegar

  • 1 tablespoon Chinese wine (or sherry)

  • 1 tablespoon corn flour

Method

 

1. Put the bass in a steamer over boiling water and steam for 15 minutes.

2. While the fish is cooking, shred the pickles.

3. Heat lard and cook shallot for 1 minute.

4. Add pickles, sugar, vinegar, wine and corn flour. Cook for 2 minutes.

5. Arrange the bass on a heated serving dish. Spoon pickles and sauce over it and serve at once.
