Bass with Chinese Pickles Recipe

Method
1. Put the bass in a steamer over boiling water and steam for 15 minutes. 2. While the fish is cooking, shred the pickles. 3. Heat lard and cook shallot for 1 minute. 4. Add pickles, sugar, vinegar, wine and corn flour. Cook for 2 minutes. 5. Arrange the bass on a heated serving dish. Spoon pickles and sauce over it and serve at once.
