Three-Color Egg Slices Recipe

Ingredients
3 salty eggs
3 preserved (thousand year old) eggs
3 chicken eggs
1/2 teaspoon salt}(1)
1 tablespoon lard or sesame oil}(1)
1/4 teaspoon MSG}(1)
3 tablespoon water}(1)
Method
Cook salty eggs in boiling water about
10 minutes until hard-boiled; remove shells from salty eggs and
preserved eggs and dice into
1/2
inch cubes.

Beat chicken eggs lightly and add (1);
mix lightly and add other diced eggs; mix again. Lightly oil a 6 x 4 inch square mold or box*, pour egg mixture into mold and
place in steamer. Steam over medium heat
for about 20 minutes until eggs are firm; remove mold from
steamer and let cool; invert onto cutting board and slice. Place slices on serving plate and serve.
* A lightly oiled piece of heavy-duty cellophane may be used to
line greased mold to facilitate removal of egg mold. Garnish with coriander.
