Shrimp Toast with Quail Eggs Recipe

Ingredients
8 quail eggs
5 slices white bread
1 tablespoon chopped ham
1 tablespoon black sesame seeds
15 sprigs of coriander
170 grams raw, shelled shrimps

6 cup oil for frying}(1)
Method
Cook eggs about 5 minutes until
hard-boiled; remove shells and cut each egg in half; remove crusts from bread (discard) and
cut each slice into 3 sections; trim each section into a diamond shape.
Rinse and devein shrimp; chop finely and mix with (1) ; lightly
throw mixture against inside of bowl about 5 minutes to form a
smooth paste.
Spread a portion of shrimp paste on a piece of bread; place half of
a quail egg on shrimp paste. Add a l
little more shrimp
paste around edges of egg to secure it to bread and smooth surface. Dip
the tip of a chopstick in chopped ham and then place ham on shrimp
paste; repeat process for sesame seeds.
Place one section of
coriander beside ham and sesame seeds.
Heat oil until medium hot; deep-fry shrimp paste slices about
1 minute until golden brown; remove,
drain and place on serving plate; serve.
* To prevent bread from picking up impurities during deep-frying,
deep-fry in clean oil.
