Scrambled Eggs with Dried Shrimps and Cod Fillet Recipe

Ingredients

  • 43 grams shrimps, dried

  • 570 ml water

  • 6 eggs

  • 227 grams cod fillet, diced

  • 1 teaspoon salt

  • 60 grams flour

  • 3 tablespoons peanut oil


Method

1. Bring the shrimps to the boil in just enough water to cover.
2. As soon as boiling is established, remove from heat, leave, covered, for 25 minutes,

    then drain but keep the liquid.
3. Beat the eggs with the shrimp, shrimp liquid, cod and salt.
4. Gradually dilute flour with remaining water and stir it into the egg mixture.
5. Beat together to amalgamate all ingredients.
6. Heat the oil, pour the eggs in, scramble quickly and serve at once.
