Peking Style Fried Bean Curd Recipe

Ingredients

3 squares bean curd

1/2 cup flour

1 egg (beaten)

1 tablespoon chopped green onion

1 tablespoon ginger root

1 tablespoon rice wine

2 teaspoons salt}(1)

1 teaspoon MSG}(1)

1/2 tablespoon sesame oil}(1)

1/2 cup stock}(1)

 

Method

  • Cut bean curd into 2'/2" x 1" x 1/2" pieces; coat each piece lightly with flour, then dip into egg.

  • Heat pan and 2 tablespoon oil; arrange bean curd piece by piece evenly at bottom of pan and fry over medium flame for 1 minute; when bean curd is a golden color, turn over, add 2 tablespoon oil and fry until golden; add rice wine, scallion, ginger and (1) ; pierce bean curd with a fork (to allow liquid to soak through); cook over low flame until liquid is absorbed by bean curd.
