Oyster Omelette

280 ml milk

teaspoon Ve-Tsin

1 1/2 dozen plump oysters

1 dessertspoon oil

57 grams lean, uncooked pork

57 grams fresh mushrooms, sliced

30 grams bamboo shoots, sliced

spring onions, finely chopped

Method
1. Beat the eggs, add milk, Ve-Tsin, salt
and oysters.
2. Heat oil in pan.
3. While heating, shred the pork, then quick fry it in the oil.
4. As soon as it turns uniformly white, add mushrooms and bamboo
shoots. Cook for 1 minute.
5. Add spring onions to the egg mixture.
6. Season with pepper, pour into the pan and fold in the usual way, and
serve with the
following sauce poured over
it.
