Ham and Pea Omelette Recipe

Ingredients
Method
1. Boil peas quickly in water for about 4
minutes and strain.
2. Quick fry the ham in a lightly greased pan (1 minute).
3. Whisk eggs in a basin with soy sauce, salt, pepper and chives.
4. Allow ham to cool, then add to the eggs with the peas.
5. Whisk together, then fry in the ordinary way in a hot oiled pan.
Note:
Do not over-cook.
Variations
Bacon and bean omelette
As above, substituting bacon for ham and sliced beans for peas.
Bacon and bean sprout omelette
As above, substituting bean sprouts for beans, but do not boil the bean
sprouts; simply toss them in the pan with the bacon.
