Fried Egg Plants Recipe

 

Ingredients

  • 2 tbsp light soy sauce

  • 600 g egg plants (cut each into 4 pieces)

  • 6 sliced shallots

  • 4 cloves crushed garlic

  • salt

  • pepper

  • sugar

  • 300 g shelled shrimps

  • oil for shallow frying

  • spring onion (chopped for garnishing)

 

Method

 

1. Make cuts on surface of egg plants rub in seasoning, shallow fry and drain well.

2. Pour out the oil leaving about 3 tbsp in pan.

3. Fry the shallots and garlic.

4. Stir in the shrimps, sauce, sugar, pour over the egg plants when cooked. Garnish.
