Eggs and Crab Recipe

Ingredients

  • 227 grams cooked crab meat (or canned)

  • 227 grams fresh bean sprouts

  • 2 tablespoons oil

  • 1 1/2 teaspoons salt

  • 1/2 teaspoon pepper

  • 6 eggs

  • 3-4 spring onions

Method

 

1. Pick over the crab meat, discarding any cartilage.
2. Wash and drain bean sprouts.
3. Heat oil and toss the crab meat for 1 minute.
4. Add bean sprouts, season with salt and pepper, mix and cook for 1 minute.
5. Beat the eggs lightly and stir carefully into the mixture.
6. Cook on low heat, stir once or twice, but do not scramble.
7. Scatter the spring onions over the top, serve as soon as the eggs are set.
