This is a much-maligned delicacy, like oysters and caviar, and acquired taste but well worth the acquisition.

The eggs are no more " rotten" than the English water glass egg, but the difference in the method produces a different result. They are served cut into segments and make an excellent hors d'oeuvre, usually serve with Chinese pickles.
