Egg Foo Yung Recipe

Ingredients

 

10 eggs

1 1/2 teaspoon salt }(1)

1 teaspoon MSG}(1)

1 teaspoon sugar}(1)

1/4 teaspoon black pepper}(1)

1 teaspoon sesame oil}(1)

1 cup raw shelled shrimp

1 cup oil for frying

1 cup shredded precooked bamboo shoot}(2)

1/2 cup shredded roasted duck} (2)

1 cup 1-inch sections Chinese Chives} (2)

1 cup water }(3)

1/2 teaspoon salt}(3)

1/4 MSG}(3)

1 1/2 teaspoon cornstarch (corn flour)}(3)

 

Method

 

  • Devein shrimp; rinse and drain. Heat oil until medium hot and deep-fry shrimp over medium heat until changed in color; remove and drain.

  • Lightly beat eggs; add (1) and mix; add precooked shrimp, (2) , and stir lightly.

  • Heat pan and 5 tablespoon. oil; add egg mixture and lightly stir-fry over medium heat until mixture has begun to solidify; flatten lightly to form a big pancake. Continue to cook until golden brown. Flip over to uncooked side and cook until golden; add 0 and when sauce has thickened, toss lightly to coat pancake; remove to serving plate and serve.


* If Chinese chives are unavailable, substitute green onion or leeks.
   Garnish with coriander
