Chrysanthemum Omelettes Recipe

'chrysanthemum'
Ingredients
4 eggs
pinch salt
pinch Ve-Tsin
2 tablespoons lard
strip of red pimento
Method
1. Beat the eggs lightly, season with
salt and Ve-Tsin.
2. Heat omelets pan, grease lightly and, use
just enough egg mixture to make a film on the bottom
of the pan.
3. Fry these paper-thin pancake omelettes, until all the mixture is used
up.
4. Lift the omelettes from the, pan to a cutting board and cut into
3-inch by 6-inch strips.
5. Fold over once, make 1-inch incisions down- wards through the double
thickness.
6. Roll into a cylinder and open out the cut to form a `chrysanthemum'.
7. Stamp out a small circle of red pimento (or tomato) and put in the
centre of each flower.
Note:
This tastes good and looks very decorative with a green salad.
